Tell us a little about yourself and your business. What made you decide to open The Urban Cookie, and how long have you been in operation?
I have owned and operated other bakery and cafe businesses in the Denver area for many years. In 2017, I sold my businesses and quickly grew to learn how badly I missed the industry and the environment.
So, this past fall, I jumped on the idea to open a cookie shop and it had to be on Colfax. I was looking for a very urban vibe and love the Colfax character. The Urban Cookie has been open since Jan. 15th, 2021.
Why did you choose Colfax?
Colfax is for everyone. There is never a dull moment on the Avenue and for me that is super appealing. I love commotion, clatter, traffic, and people. This was a must on my location list for The Urban Cookie.
Tell us something about The Urban Cookie that people might be surprised to learn.
I decided to bake cookies again because I love cookies and in 2015 my Denver area cookie fans voted for my Cranberry Oat cookie to be featured as one of Colorado’s best cookies of the holiday season on the Today show. So, with my former bakery, Cake Crumbs, I had the honor of featuring my cookie on national TV. It was made famous before ever opening The Urban Cookie.
How is The Urban Cookie coping with the pandemic, and how can people support you right now?
I was crazy enough to open during the pandemic – we’re doing well. We have seen growth week over week. I say to all our neighbors, stop in for a treat and to say hello. We have excellent Covid precautions in place, and the shop is inviting for a quick trip in and out.
